Paleo Guacamole on Boiled Eggs
Traditional guacamole with only the healthiest of ingredients; avocado, tomato and onion with a few herbs over perfectly boiled eggs.

Ingredients
  

  • 4 x eggs
  • 1 x avocado , peeled and de-stoned
  • 1 x tomato , very finely chopped
  • 1 x spring onion , very finely chopped
  • 1 x garlic clove , crushed
  • 1/2 tsp olive oil
  • 1/4 tsp lemon juice
  • 1/4 tsp lime juice
  • pinch of sweet paprika
  • pinch of salt

Instructions
 

Boiling the eggs

  • Place all 4 eggs in a saucepan of cold water. The water should cover the eggs.
  • Place the pan on the hob and turn the hob up high.
  • Bring the water to a boil.
  • When it starts to boil, set a timer for 7 mins.
  • When the 7 mins are up immediately run the eggs under cold water until they feel cool.
  • De-shell the eggs.
  • Slice the eggs, divide in half and arrange the slices on two plates.
  • Sprinkle each portion with the pinch of salt

Making the guacamole

  • Using a fork or a food processor make the avocado smooth.
  • Mix in all of the remaining ingredients except for the sweet paprika.
  • Spoon the guacamole over the boiled egg slices.

To Serve

  • Sprinkle the sweet paprika over each guacamole and eggs portion.
  • Serve chilled.
