Paleo Guacamole on Boiled Eggs
Traditional guacamole with only the healthiest of ingredients; avocado, tomato and onion with a few herbs over perfectly boiled eggs.
- 4 x eggs
- 1 x avocado , peeled and de-stoned
- 1 x tomato , very finely chopped
- 1 x spring onion , very finely chopped
- 1 x garlic clove , crushed
- 1/2 tsp olive oil
- 1/4 tsp lemon juice
- 1/4 tsp lime juice
- pinch of sweet paprika
- pinch of salt
Boiling the eggs
Place all 4 eggs in a saucepan of cold water. The water should cover the eggs.
Place the pan on the hob and turn the hob up high.
Bring the water to a boil.
When it starts to boil, set a timer for 7 mins.
When the 7 mins are up immediately run the eggs under cold water until they feel cool.
De-shell the eggs.
Slice the eggs, divide in half and arrange the slices on two plates.
Sprinkle each portion with the pinch of salt
Making the guacamole
Using a fork or a food processor make the avocado smooth.
Mix in all of the remaining ingredients except for the sweet paprika.
Spoon the guacamole over the boiled egg slices.
