‘The Curry That Tastes Like a Bhuna’

This recipe needs
- 2x large chicken breasts, diced
- 200g or a 6oz tin of chopped tomatoes
- 1x fennel, finely chopped
- 2x garlic cloves, crushed
- 125 mls or 1/2 cup coconut cream
- 1 Tbsp tomato puree
- 3 Tbsp fat (I use lard)
- 1/2 tsp curry powder (mild, medium or hot, the choice is yours)
- 3/4 tsp salt (1/4 tsp salt + 1/2 tsp salt)
- 1 1/2 tsp dried cumin
- 1/2 tsp dried ground ginger
- 1/2 tsp garam masala
- 1/2 tsp dried ground coriander
- 1/2 tsp dried ground cinnamon
- 1/8 tsp dried ground turmeric
How to make it
- 2x large chicken breasts, diced
- 1/2 tsp curry powder(mild, medium or hot, the choice is yours)
- 1/4 tsp salt
Add the above ingredients together at the beginning.
- 3 Tbsp fat
Heat the fat in a large frying pan over a medium-high heat.
Pre-cook the chicken mix till it’s just done, then remove it from the pan.
- 1x fennel, finely chopped
Add the fennel to the same pan and cook till soft.
- 2x garlic cloves, crushed
- 1 1/2 tsp dried cumin
- 1/2 tsp salt
- 1/2 tsp dried ground ginger
- 1/2 tsp garam masala
- 1/2 tsp dried ground coriander
- 1/2 tsp dried ground cinnamon
- 1/8 tsp dried ground turmeric
Extras to add
- 1/8 tsp cayenne pepper, add with the other spices
Turn the heat down to medium.
Add the garlic herbs and spices, keep stirring for this bit, and cook for 5 mins.
- 1 Tbsp tomato puree
- 200g or 6oz tin of chopped tomatoes
- 125 mls or 1/2 cup coconut cream
Add the puree, chopped tomatoes, coconut cream and simmer for 15 mins.
Re-add the chicken.
Simmer for a further 30 mins.

When I first made this my husband declared at the first mouthful “I like it. It tastes like something I have at an Indian… but I don’t know what.”
“Well, it is supposed to be a curry.” I replied.
After a few more mouthfuls… “Maybe a korma.” He didn’t sound too sure.
Halfway through… “It tastes like a bhuna!”
Ever since it’s been ‘the curry that tastes like a bhuna’.
