After months of no nursery and no kindergarten school (due to the coronavirus shutdown), both the nursery and now the summer school as well, here in Malta have finally started up again. (A sigh of relief from me and my husband!)
Last year, when we signed our eldest, Isla, up for the summer school, every morning began with tears – she really didn’t want to go. This year, after so many months of boredom stuck inside the house, she was actually happy to go. Now, she brings something home every day, various pictures, lollipop stick people, a key(we were very confused on what activity involved a key but after some questioning we were sure she had been given it rather than taking it and as long as she was enjoying her days we weren’t going to complain). She made her own ‘forky’ (see toy story 4 for that one) last week only hers was called ‘spoony’ – guess why! One day she came home and declared she needed to be more healthy and she needed to eat more vegetables…
She thought this tomato and cucumber salad looked pretty; it has purple (the onion) and red (the tomatoes) the only thing better would be if there was some pink – but I couldn’t think of a pink vegetable so we had to go without. As pretty as it was it failed to tempt her. I pushed a bit onto her plate, it got pushed back onto mine again. She didn’t want to eat more vegetables any more… I tried!
Now in the interests of full disclosure let me tell you that this particular salad is extremely light. By itself, it probably won’t fill you up for lunch and for dinner definitely try to pick yourself out a nice, hefty chunk of meat with plenty of fat like roast pork joint to accompany it or you’ll be munching away on whatever comes to hand within the hour. However, as an accompaniment dish, this salad is a pretty salad and it’s also great tasting; really, really great – if only my kids would try it!
Paleo Tomato and Cucumber Salad
- 5 medium tomatoes , diced
- 1 medium cucumber , diced
- 1/2 medium red onion , finely sliced
- Mix everything together.
