Paleo Rucola, Tomato and Toasted Pine Nut Salad

See how bright and colourful this photo is? I am so impressed with it I just had to say. For a non-photographer such as myself a pretty photo is few and far between and more often than not my food photos are taken in such a rush (somewhere between the cooking and the eating) I barely have time to do anything more than snap a few photos with my fingers crossed.
I have heard of food photography involving weird things like glue to make the cheese look stretchy or oil to make it glisten and paint to make it colourful, exactly how true this is I wouldn’t know. What I do know is that I have to eat mine afterwards, so it’s just plain old food I am photographing. There’s also no way I could afford to waste whole platefuls of food, it would double my food bill and it’s too high as it is.
Often I have to take the photographs on my own with two kids wrecking havoc around me. Couples on shift work, anyone? My husband and I are ships passing in the night or morning or afternoon, any time of day really but the passing thing applies regardless. Our main form of communication is currently text and while previously it involved some little loving wish, since the kids came along it is usually along the lines of some shopping item we require – Apples! Wet wipes! Toilet paper! Etc! Etc!
However, when I look at my first photographic efforts I do see a bit of an improvement between then and now – maybe there is hope for me after all.

Paleo Rucola, Tomato and Toasted Pine Nut Salad
Ingredients
- 100 g rucola (arugula) (3.5oz)
- 6 medium tomatoes , diced
- 1 tbsp Toasted Pine Nuts
- 1 portion Simple Lemon Vinaigrette
Instructions
- Mix everything together.
- Serve.
