A Little About the Recipe: Low Net Carb Chia Bread

Low Net Carb Chia Bread is soft, filling, and really delicious. 

While I was considering a label for this bread, I went through numerous names trying to give an instant idea of where this recipe would be most beneficial.  Basket bread, paleo aside bread, chia seed soup bread…  None of these names made the cut, but you can see where my ideas were.  This bread will stretch to being covered in some spread for a morning breakfast or as a quick snack when you feel a little hungry.  But, for holding a burger together, or as the ending to a loaded sandwich, I think better alternatives are around.  Ideally, this bread, in my humble opinion, is the absolute best choice for dipping in soup or laid out in a basket as an extra side for dinner.  

This bread is a small loaf yet substantial enough between two people. The addition of chia seeds and their whopping amount of fibre make you feel full on a small amount without detracting from the taste or adding to the net carbs. 

When making this bread, one area of difficulty is pouring the bread batter into the bread tin.  I saw once where the author of wholesomeyum had a nifty idea and held the baking paper apart with pegs which works well.  Just remember to remove those pegs before you place the bread in the oven.  If you use plastic ones and forget to remove them, then, 45 minutes later, you have to bin your bread and spend a lot of time scraping plastic from everywhere it dripped around the oven.  Another option to using pegs is to use an extra pair of hands to hold back the paper for you.  With the current lockdown in Malta, I have two tiny helpers on-hand/underfoot.  This works just as well as using pegs, but with a lot of giggling and the added bonus of a proud “I helped Mummy”.

I Recommend This For: Low Net Carb Chia Bread

Chia seeds have an enormous amount of fibre which keeps the net carbs low but still adds to the total carbs. For whole30, we have the addition of a flour, albeit almond flour, the idea of it being bread, and the addition of apple cider vinegar. Avoid this recipe for whole30 and, also, for strict paleo. The true paleo diet, unfortunately, disallows the use of chia seeds.  I, personally, do not have problems digesting chia seeds, but as my health has improved over the years I have moved away from the strict paleo rules to a more paleo-ish lifestyle instead. If you are still struggling with your health, then it is best to avoid this recipe.

For paleo-ish and keto, this is a great bread to include in your specific healthy diets.  As I said previously, I think this bread works best with soup.  Unfortunately, I don’t have many soup recipes and none at all for ketoPaleo-ish might like to take a look mainly because the Butternut Squash and Carrot Soup and Creamy Parsnip and Leek with Ginger are both absolutely delicious.  But, for keto-ians, not wanting to let you down, I hunted the internet for some choices instead.  I found this site which had very tasty looking soup recipes. 

However, for a non-liquid meal for keto, place warm slices of low net carb chia bread slathered in butter beside Le Keto Brunch for two.  A tasty dinner could be to include it with Simple Roast Chicken and Garlic Butter Mushrooms.

A paleo-ish dinner I recommend would be to add the bread in as part of My Baddha Bowl of Beef Cubes for One or use it to mop up the delicious sauce of the Paleo Low Carb Smothered Pork Medallions and a side of Mashed Cauliflower.

  • 115 g almond flour (1 cup)
  • 2 medium eggs
  • 2 tbsp chia seeds
  • 2 tbsp ghee
  • 120 ml water (1/2 cup)
  • 1/2 tsp salt
  • 1/2 tsp white vinegar
  • 1/4 tsp bicarbonate of soda


  • Preheat fan-assisted oven to 180 deg C or 375 deg F.
  • Mix the chia seeds and water and leave for 15 mins, until the water is absorbed and the seeds are 'fluffed up'.
  • When the chia seeds are ready, mix everything together.
  • Line a small bread pan with baking paper.
  • Pour the bread mix into the pan.
  • Bake 45 mins.
  • Remove from the oven and set aside for 15 mins.
  • Slice and serve warm.

Macros in 1/2 loaf: 6.2g net carbs, 15.7g total carbs, 19g protein, 49g fat, 550kcal

A Little About Us: Alex, Carl, Isla and Taran

Isla’s and Taran’s online schooling has stopped for Easter.  I can only breathe a sigh of relief for the break as it was going so badly.  Since then, we have made Easter hats to wear and Easter baskets to collect chocolate in.  Isla wants a scavenger hunt.  Taran just wants his chocolate.

I started painting my backyard.  After it was ruined by the block of flats built behind us, it has been all but unusable.  Now, with a month away from work due to the second lockdown in Malta, I have some time to get it done.  Time to roll my sleeves up. It’s my 46th birthday in two days. I am hoping I will finish in time so I can have some peace and quiet as a birthday present.
