Both my kids have both been off sick all week. In these days of pandemics, kids cannot go to kindergarten or nursery or school with even the mildest of sniffles making it very clear to me that all kids will be spending a lot of time off sick at home over the next year and possibly the next few years.

When I rang the nursery to tell them my son would be off for over a week with what was not much more than a very minor runny nose his nursery carer told me its what they were sending all the kids home for. In fact, the nursery has only around 50 % of its kids in attendance at any one time because they are having to be so strict about those runny noses.

One good thing is the schools will have to rethink there 100% attendance trophies which, quite frankly, were the most horrendously unfair thing they ever did anyway. I remember my little niece, she was five years old at the time, being absolutely devastated because her brothers received a trophy of attendance. She had had a raging ear infection (obviously not her fault) that year and had been off sick for one day and so had not received one. I can only imagine how those poor kids with the chronic illnesses feel when it happens to them year after year after year. Not only are they constantly sick so they miss out on a lot of their general childhood but this is yet another thing they miss out on. It’s like rubbing salt into a wound.

So, both kids off for a week, it’s way too hot to do anything and neither one is exactly ill enough to even slow down for a minute! Luckily my parents had hopped on one of the first flights between England and Malta since the airports opened up and my mum has been doing a bit of the babysitting so I can sleep a few hours after a night shift. My dad managed to catch his very own cold on the way out to Malta, so he is doing the resting for everyone.

When the kids are running around having a dinner recipe with requires the least amount of prep time is a must! I admit when I first started foil wrapping stuff I had problems getting it to ‘tent’ up. I was always trying to peel the meat off the foil after cooking (you only didn’t see it in the food photos ‘cos I hid it underneath where no-one could see!). Now though, I’ve had a bit of practice and I’m a dab hand! This recipe is a case of mix and wrap so it couldn’t be easier; and after you set the timer, you don’t need to worry about anything else till it beeps.

Try pairing this up with some Sweet Potato Fries; sweet potato is one of the most filling veggies and so it pairs well with the lighter meats.

Ta-daa!! A whole meal in 25 mins with only one baking tray to clean up.

  • 2 200g salmon fillets
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/4 tsp dried dill
  • 1/4 tsp dried coriander
  • 1/4 tsp dried parsley
  • 1/4 tsp salt
  • 4 thin slices of onion


  • Preheat a fan-assisted oven to 200 deg C (400 deg F).
  • Mix together the olive oil, lemon juice, dill, coriander, parsley and salt in a small bowl.
  • Place each salmon fillet onto a separate sheet of aluminium foil and pour the seasoning mixture equally over both fillets.
  • Place 2 onion slices on top of each fillet.
  • Wrap the foil loosely around each salmon fillet making an enclosed 'packet' for each.
  • Bake in the oven for 25 mins.
  • Serve.
