Creamy Mushrooms over Marinated Lamb Chops

A Little Bit About the Recipe: Creamy Mushrooms over Marinated Lamb Chops

Lamb is delicious meat.  If it wasn’t so expensive, we would have it a lot more often.  I bought lamb chops, but this time they were super-small, so we got four each instead of two.  For average size chops however, I would usually assign a portion of two chops per person. 

I thought I would grill this recipe just for a change, but you can just as easily fry it.  Add about ½ tbsp of oil to a frying pan.  Put it on a high heat.  When the oil starts shimmering, pop in your lamb chops.  You are looking at about 4 mins cooking for each side for medium but make sure to use a meat thermometer as the best way to check your meat.

Now for my recommendations, I worked out the nutrient values using coconut cream for the paleo and lactose intolerant; there is nothing that isn’t wholesome and good according to these particular lifestyle diets.  Please go ahead and indulge without consideration for consequences because there aren’t any.  Pair it up with some fried cabbage or Mashed Cauliflower, it will leave your oven free for grilling the lamb and make the best use of that lovely creamy sauce. 

Keto-ians and Atkins’-ers, if you have no intolerance to lactose, it might be worth using some double cream over coconut cream to shave off that little bit more from the carbs.  The difference is minimal, but a little bit less in carbs here and there can add up over the day.  By the side, try a lovely frittata (It’s at this moment, I realise I don’t have any frittata recipes in my site.  I made a really nice one the other day which I’ll pop in for next week’s post).   Increase the fat content by adding extra cheese and cream to your frittata for keto, go a tiny bit plainer and pop in some healthy veggies in for Atkins’ Maintenance.

  • 4 lamb chops

For the Marinade

  • 25 g shallots
  • 3 tbsp olive oil
  • 1 tbsp white vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp allspice
  • 1/8 tsp turmeric

For the Sauce

  • 100 g mushrooms
  • 100 ml coconut cream (or double cream)


For the Marinade

  • Finely chop the shallots.
  • Place all marinade ingredients, shallots, vinegar, salt, black pepper, garlic powder, olive oil, allspice and turmeric in a marinating bag (or a shallow dish and cover it).
  • Leave in the fridge for 4 hours.

Grilling the Chops

  • Remove the chops from the fridge about 30 mins before cooking to allow them to reach room temperature.
  • Remove the chops from the marinade, but do not discard the marinade. Place each chop separately on a baking tray.
  • Place the grill on a medium high heat, grill 7 mins each side. More if needed.

Making the mushroom sauce

  • While the chops are grilling. Melt the ghee in a saucepan over a medium heat.
  • Add the mushrooms and remaining marinade and cook for about 5 mins until the mushrooms soften.
  • Add the coconut cream and stir continuously for around 5 mins until the cream is warmed. Remove from the heat.

To Serve

  • Place 2 chops each onto plates and pour half of the creamy mushroom sauce over each.
  • Serve.

A Little Bit About Us: Alex, Carl, Isla and Taran

I am very, very cold!  Winter has hit the little Island of Malta, and I am feeling the effects in full.  Malta seems to receive a huge cold blast around two weeks after England gets one.  I knew it was coming when news from relatives and friends in England began to show snow falling.  Pretty quickly, there were roads blocked, kids out on their sledges and snowmen being made.  Now, the cold has floated it’s chilly way across Europe and arrived in Malta, to my misery.

Maltese houses have no central heating or insulation, there is only one limestone brick between the inside and the outside.  Each home has a gas heater or, as in our case, the air conditioning, set to warm. Still, neither substitute is anywhere near as effective as central heating, and I miss my central heating.  My Maltese friends say it’s because the Winter is so short they don’t need it; so, every year, we all freeze together and complain until Summer gets here again.  Then, of course, we all complain about the heat!  But, right now, while wrapped in a blanket with my hands almost numb, too much heat sounds really good.  Soon, I will win the lottery and get underfloor heating installed!

One thing this wintery weather did prompt was a rewatching of The Snowman.  It’s a throwback to my childhood.  At the time it was highly original – it still is.  As I remember when it first came out, it was as famous for the choir boy song as for the animated short film itself.  Aled Jones, the Welsh choir boy in question, achieved some brief notoriety in England, as well as an album.  Over the years, the magic of The Snowman hasn’t faded and, within a few minutes of the film starting, both Isla and Taran were enthralled.  That is, right up until the end, at which point they wanted to build their own snowman.  There were complaints because I told them Malta did not get cold enough for it to snow.  Somehow Mummy was supposed to fix this problem…  Are we humans ever happy with the weather?  As a now, supposedly 😊 adult person, I very much enjoyed The Snowman as well, that is until they tried to recreate the flying scene around the living room when everything went flying but them.
