Courgette Noodles/Zoodles

American zucchini meet English courgette. Zoodles meet err… coodles? Yeah I know! That’s why they get called courgette noodles instead.
I tried this recipe during the zoodle craze. The first time I didn’t have a spiraliser and dutifully set about wielding my potato peeler with great gusto on the first courgette. Half-way through the gusto had deflated and I ground on with grim determination till two courgettes were en-ribboned. It was just too much time and hard work! Along came the spiraliser, so much easier!
Initially I used to fry them in fat but they would wilt to about a quarter of their size on the hob and I found I needed so many of them. I began microwaving them instead and found not only did I end up with more it was easier, faster and tasted better too.

Courgette Noodles/Zoodles
Equipment
- Spiraliser
Ingredients
- 1 medium courgette per person
Instructions
- Peel and spiralise the courgette/zucchini.
- Place the spiralised courgette on a plate and microwave on high for 2-4 mins until heated through, 'fluff' the courgette part way through.
