or The World’s Best Banoffee Pie

On 4th of April I turned 45 years old. I have never really grown up when it comes to my birthday and every year I get very excited about it laying down my plans weeks in advance. This particular birthday was no exception and I had set to and planned my day in varying detail.
Then the coronavirus happened and all my plans went splat!
No family day out, no shopping for birthday jewellery, no meal out with my husband..
Time to improvise…
The day out with the family became a day in.
I paper-mached a solar system instead. I failed to learn from my last paper-macheing activity and once again ended up doing it myself. I tried anyway but I bought some highly defective balloons this time around and the sun, saturn, uranus and mercury all sprang a leak. In a conference with my mum we decided mercury would just be a rocky terrain but as the rest were gas giants there was no way I could get away with the lack of sphericalness (spherity?) and would have to start over. A second conference involving a corporate board of only me decided the misshapen planets would be going through turbulent gas eruptions and were fine just as they were so I did not need to start again. They are currently awaiting painting in various planet-like colours.
Later came food. When it comes to birthdays we set aside diets and health considerations. Most years for my birthday I tend to opt for us to go out for steak diane. One thing I have so far not been able to cook well is nicely done steak, I fail with it every time. In fact if we do buy some steak the cooking tongs get passed over to the hubby so I don’t ruin the meat but I do like a nice steak diane so it’s become my special occasion meal out. This year the steak diane went on hold and we had a disgracefully non-paleo pizza delivered instead ( – did I mention it was my birthday…). Food delivery business doing a roaring trade the delivery mopeds zip up and down the emptied streets non-stop every evening. This evening they zipped to us. Pizza made the kids very happy, staying up late made them even more happy.
The evenings entertainment had to be tempered for a 2 and 4 year old so we plumped for a certain kids movie with a long haired princess. My daughter was even happier, my son not so much. He complained for a while before deciding playing with his trains was more interesting.
For my birthday cake, I don’t have cake because I am really not a cake enthusiast. But I love banoffee pie, especially the way I make it, which I have to say is completely fantastic. Yum yum!
A Little About The Recipe: Banoffee Pie
I cannot claim for the pizza recipe but the banoffee pie recipe is all mine!!!!!!!!
It used to be that in previous years I had to make the caramel for the banoffee pie myself but in recent years those nice people at Nestle have started doing it for me. I highly recommend just buying it pre-done as it saves a lot of hassle. However, if you can’t, or you want to make it from scratch, this is how.
Place an unopened can into a large pan of water, make sure the water covers the top of the can. Simmer the can for about 2 1/2 – 3 hours ensuring there is always water covering the top of the can. When it’s done leave it overnight to cool.
And Here It Is: The World’s Best Banoffee Pie (at least I think so!)
Birthday Cake Banoffee Pie
- 150 g McVities (or any brand) milk chocolate digestives
- 90 g butter
- 1 can Carnation caramel (boiled condensed milk) approx. 400g
- 3 medium bananas
- 1 tub Elmlea double cream (or any double/whipping cream) approx. 280ml
- 1 square chocolate
- Break the biscuits up. I put them in the food processor to get rid of any lumps. Bashing them with a rolling pin also works, it just takes a bit more effort.
- Melt the butter to a liquid (in the microwave or on the hob makes no difference).Mix it together with the crumbled biscuits and then use the back of a spoon to flatten the biscuit mixture into the base of a tin of about 23 cm or 9 inches wide.
- Place the tin with the biscuit mix into the fridge, leave it to harden for 1 hour.
- Spoon the Carnation caramel over the now hardened biscuit base and spread it around to evenly cover the biscuits.
- Thickly chop all 3 bananas and place them on top of the caramel in one layer. Start on the outside and make a circular pattern into the centre. This will take almost all of the 3 bananas although likely you will have a small bit of banana left over.
- Whip the cream.
- Spoon the whipped cream evenly onto the bananas.
- Grate the square of chocolate on to the top of the cream.
- It makes the pie a little bit more solid to leave it in the fridge for a couple of hours prior to serving but it's not vital and will taste the same regardless.
