With this low carb recipe, I will give you another tasty reason to stick out your weight loss journey together. Because, most often, it’s these little things that make us feel good and keep us going.
Sunday is the traditional day of rest and relaxation (this was obviously invented by someone who didn’t have two kids…). Breakfast passed both of you by, and now you need a brunch. Here is a delicious couple’s brunch idea that you both totally deserve.

Smoked salmon is just expensive; there’s no getting around it. But, how often do you get the chance to have brunch anyway? However, it’s best to keep in mind that there are better and worse brands of smoked salmon if you want to stay healthy and keto. If you live on a small island with a limited choice like me, you have to take what you can get. But, suppose you live somewhere where you can peruse some variety? In that case, let’s peruse away…

How to Make Scrambled Eggs For Breakfast or Brunch – The Right Way!
Oft times, scrambled eggs are a rushed, neglected affair done somewhere in between brushing hair and brushing teeth whenever a few spare minutes appear. Now, this is brunch. Brunch is a lazy relaxed affair. There’s no rush. As long as you don’t pass too close to any windows, nobody will know you haven’t brushed your hair before midday. So, here’s the ultimate list of how to get those eggs scrambled – the right way.
- Eggs should be free-range.
- The heat should be at medium.
- The eggs should be continuously stirred.
- The pan should be removed from the heat when the eggs are just this side of underdone.
- The scrambled eggs should be served immediately.
- The scrambled eggs should be eaten immediately.
These rules of egg scrambling will give you the softest tastiest scrambled eggs, and, yes, we discovered that free-range does make a difference to you as well as the hens.
We always tend towards buying either Kiri cream cheese, which the kids like, or Philadelphia, which my husband, Carl, likes. Cream cheese is a taste thing so go with whichever you like best. I have to omit it because I have a general ‘…ose’ (lactose, fructose, glucose, sucrose, etc., etc.) intolerance, which is why I keep to the paleo diet. So this was made to combine both breakfast and lunch. At only 5.7g of net carbs and fat grams being higher than protein, we started our day the keto way. Now, there’s dinner and a snack. For a mid-afternoon snack, I thought of Garlic Butter Mushrooms. This is enough to keep you going till dinner, and it’s easy and quick to make. It has 3.9g of net carbs and only 5g of protein. (I always find protein content to be the biggest struggle for keeping on track with keto.) For the piece de resistance, i.e. dinner, Cajun Marinated Chicken with or without Cheddar Cheese and Garlic Mayo Dressing with a side of Keto Bacon Wrapped Asparagus Topped with Cheese and a portion of Skillet Flatbread to fill you up as well. The whole day with all suggestions in their correct portions will be 19.6g net carbs, 98g of protein and 173g of fat. Now, with your whole day sorted, what else are you going to do with your Sunday?
It’s debatable as to whether smoked salmon is paleo. The Hartwigs who developed the whole30 diet say it’s okay. But, there’s a belief that added salt isn’t paleo, and palaeolithic man would not have had salt available to add to their diet. I disagree; hence I use salt freely in my paleo recipes. Here, I look to the natural behaviour of wild animals, whose diet is still untainted by agriculture, for answers. Animals actively seek out mineral licks as part of their diet. There is a herd of elephants that stumble through a pitch-black cave to reach a salt deposit within its depths. I am sure palaeolithic man would have done so as well.
However, I am aware it is a controversy amongst the paleo community. I will say that I add salt to my diet. What you do should always be what’s best for you.
If you feel the salt used to make smoked salmon is not paleo or whole30, switch it out for some plain cooked salmon.
However you might feel about smoked salmon, you can’t argue about the cream cheese. There is no way it can be made either paleo or whole30. There is no genuine taste replacement for cheese, so it’s best to just omit for this dish. The rest of the ingredients are both paleo and whole30 and delicious.
To make A Delicious Keto Brunch for Two work for those of you on the induction phase of the Atkins’ Diet Revolution, we will need to omit a few things. Firstly, the cream cheese has got to go. So instead, replace it with 100g of your allowed hard cheese, goats’ cheese or cheddar cheese (don’t be tempted to add more, remember there can be no more than 115g (4oz) per day for cheese). Next, smoked salmon is a perfectly good induction food; just make sure to choose one which is brined without sugar (see the list above if you need to). Finally, remove the avocado and tomatoes. Replace them with a more acceptable cup of salad greens. Remember, you can have two cups per day, so save the other one for dinner. Then, top it off with half a tablespoon of mayonnaise instead.
For dinner, think about having the Simple Roasted Pork Loin. It’s super cheap and effortless to make giving you time for other things you would rather be doing on a Sunday.
Atkins’ Revolution dieters in the Ongoing or Maintenance Phases can have this recipe as it is, as long as your personal carbohydrate count is enough. Just take into account the fat content is higher than the protein content, and you will need to correct it later in the day.

A Delicious Keto Brunch For Two
- 1 medium avocado
- 50 g cherry tomatoes (1.5-2oz)
- 200 g smoked salmon (7oz)
- 100 g cream cheese (we use Philadelphia) (3.5oz)
- 4 medium eggs
- 2 tsp butter
Make the scrambled eggs
- In a medium frying pan melt the butter over a medium heat.
- Crack the eggs in a bowl, add the salt, and whisk with a fork.
- Add the eggs to the frying pan. Stir the eggs often.
- When the eggs are mostly solid removed from the heat and divide equally between two plates.
- Slice the avocado, halve the tomatoes and divide between the plates.
- Give equal amounts of smoked salmon and cream cheese to each plate.
- Eggs can be served on a separate plate for space, or kept all together.
- Wrap a slice of avocado and some cream cheese inside the smoked salmon until the smoked salmon is gone. Eat the rest as it is.

My kids were supposed to go back to school today. A last-minute teachers’ strike over the school opening or not, because of the coronavirus, put an end to that. The government wants the schools to open, the teachers’ union wants them closed. There is a bit of an impasse.
Schools in Malta start early at 07:45am. It’s a way to try and beat the heat; if they open early, they can close early. The message of “no school” got sent out just after 7am. There was a very confused queue of parents and students outside the gates this morning.
My daughter, Isla, shed more than a few tears. She wanted to go back so she could see her friends again. My son didn’t care. So now they are home for two days or perhaps longer… But, with everything that has been piling up over the Christmas holidays, I couldn’t put things off any longer. I tried to get ‘things done’, the kids had other plans.
Taran wanted to go inside and then outside, then inside, then out again for the entire time. Then, when I sat at the computer, he placed all his dinosaur toys next to me, and we had to go through their names. We are both getting quite good at recognising them now.
Isla came to climb on my lap as I continued to try desperately to use the computer. She wanted to show me what she wanted for her birthday – her birthday is in May! I told her to tell me nearer the time. We shall see if she remembers. Finally, midway through the morning, I gave up. Luckily, Grandma and Grandad are still visiting Malta for now. So my two small ones have been deposited with their Grandma for the day instead.
So, after a bit of a non-start, all the family things are done. Now I can sit down at the computer. My first assignment came back a few days ago from my Teach English as a Foreign Language Course. I received a distinction mark. Go, me! I was so shocked, I took a picture and sent it to my husband, Carl. He rang me up, gave me a big congratulations and listened. Excitement or enthusiasm equals rambling from me. I rambled, he listened. Good hubby!
