The Taste of Cinnamon

Paleo Pork Chops with Apple Cinnamon Sauce is a delicious and warming recipe.  Every time I taste cinnamon, I think of Autumn back in my native England.  When the cold begins to settle in, and the leaves are falling and making a crunching sound on the floor.  It’s something I very much miss while living in Malta.  Quite why the smell and taste of cinnamon pings such a memory, I really don’t know.  Cinnamon is an Eastern spice mostly harvested in Indonesia and definitely not native to England or Malta. 

Apples in Malta

Both Malta and England produce their own apples.  However, I have rarely seen apples from Malta in any of the local shops.  Most apples I see and buy, for this recipe and others, are imported from Malta’s nearest neighbour, Sicily.  The volcanic soil, courtesy of the highly active Mount Etna, makes it the super-producer of fruit in this region.

A Budget-Friendly Recipe

With Sicily being just over the water from Malta, apples are cheap, and pork is one of the most affordable meats in most countries.  This makes Paleo Pork Chops with Apple Cinnamon Sauce a very budget-friendly main dish.  But with such great taste combinations, it tastes so deliciously decadent it won’t taste cheap. So prepare to shake up an otherwise ordinary weekday meal.

Controversial Inclusions

While you can easily exchange butter for ghee, it’s impossible to go the other way and exchange the ghee for lard or olive oil. This is because the presence of some kind of buttery taste cannot be replaced effectively or omitted.  This is the same for the honey, another essential part of the sauce.

Whole30, Keto, Atkins’ Induction

Due to ghee, honey and apple, those on the whole30, keto and Atkins’ Induction diets cannot use this recipe. Furthermore, for all the reasons given above, it’s not even possible to adapt it.  Try the plainer but equally delicious Juicy Pan-Fried Pork Chops instead.

Paleo, Paleo-ish and Atkins’ Ongoing Weight Loss and Maintenance

Some great additions to the side of Paleo Pork Chops with Apple Cinnamon Sauce is Mashed Cauliflower.  Set the cauliflower for the mashed cauliflower in boiling water just before you start on the Pork Chops. Everything will be ready at about the same time.  Another great addition here would be Skillet Flatbread. The skillet flatbread has a pretty neutral, faintly eggy-bread taste, perfect for sopping up any leftover sauce.  It’s a recipe that is relatively low in total carbs to balance out those from the apple and honey. This will allow those on the Atkins’ diet to still keep their weight under control with 29.5g in total carbs for an entire meal incorporating all of these suggestions.

Ingredients
  

  • 2 pork chops
  • 3 tbsp ghee
  • 1 medium apple , peeled, cored and finely chopped
  • 1/2 tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp cinnamon
  • 1 tbsp water

Instructions
 

Cooking the pork chops

  • Remove the pork chops from the fridge about 15 mins before cooking to allow the meat to warm to room temperature.
  • Mix the salt and pepper together and rub all sides of the pork chops.
  • Melt the butter in a medium frying pan over a medium to high heat.
  • Add the pork chops to the pan.
  • Sear the pork chops on one side for 3 mins, then turn over and sear the other side for 2 mins.
  • If cooked remove the pork chops from the heat, pork should read 62 deg C or 145 deg F when cooked. Wrap the pork chops in aluminium foil and set aside.
  • Keep the pan with the juices.

Cooking the apple cinnamon sauce

  • Turn the hob heat down to medium.
  • Mix the apple, honey, water and cinnamon in a small bowl and then add to the same frying pan as you cooked the pork chops in.
  • Fry the ingredients until the apples are soft, stirring often. It will take about 5-10 mins.

To Serve

  • Unwrap the pork chops from the aluminium foil and arrange on plates.
  • Spoon the apple cinnamon sauce directly on top.
