A Little About the Recipe: Low Carb Oven Roasted Lamb Meatballs

For quite some time, I could not get my meatballs to be balls. They refused any kind of ball-like status. They also tasted lumpy and very un-meatball like. Eventually, I had my big a-ha! Moment.  It came when I squished my first balls, and they turned out the most perfectly made balls I had ever eaten. It turned out this one small act is the BIG secret to perfectly made meatballs with great taste and texture. So, remember to squish those balls!

For this particular recipe, I roasted the meatballs in the oven in the instructions I have given. It is entirely possible to cook them on the hob in some oil or lard on a medium-high heat. They will be ready in around 10 mins. The one downside to this method is the need to stand at the hob and push the meatballs around so they aren’t overdone on one side or another.  Cooking the meatballs in the oven means you can abandon them and do something else; pop them in, set a timer and go off to sort out the “I had it first!”  argument that started at the worst possible moment.  Choose whichever method is the most convenient for you.

I purposefully left Atkins’ Induction off the list for this recipe because of the fennel.  Fennel comes in as a phase 2: ongoing veggie according to the original Atkins’ Diet Revolution by Dr Atkins’ and the original instructions are what I am following here.   If you follow the newer Atkins’ Diet plans or don’t feel the need to be so strict, indulge yourself the same as every other diet, because it’s one size fits all for this recipe.

The meatballs are so juicy they don’t need any added sauce giving a lot of flexibility to the side dish choices.  Paleo and whole30 might like to try Roasted Broccoli and Butternut. The mild spices complement the meatballs but don’t overpower them.  They have the same oven baking times so start about 1 hour 15 mins before you want to eat.  Fry the fennel for the meatballs first and set it aside to cool while you make up the roasted broccoli and butternut.  Pop the Roasted Broccoli and Butternut in the oven and then start squishing the meatballs ready to pop in 15 minutes later.

The second recommendation I have for paleo is also the same for keto and Atkins’ Maintenance too.  It’s Fried Cabbage with Crispy Bacon.  (If you omit all bacon for paleo, it’s best to go with recommendation number one.)  The Fried Cabbage with Crispy Bacon is done on the stovetop, so there are no oven temp clashes.  The fried cabbage and crispy bacon takes a little longer from start to finish, so start with that recipe first. The whole meal will add up to 10.7g worth of net carbs for a very filling and delicious dinner with moderate protein for keto.  However, don’t forget to add in some fat somewhere else in the day, as the fat and protein content of the two dishes are pretty even.  Atkins’ Maintenance comes in at 17g total carbs for this combo with a nice protein/fat balance your meal choices for the rest of the say are yours.

Ingredients
  

  • 500 g lamb mince (1lb)
  • 60 g fennel (about 2oz or a quarter of a fennel)
  • 1/2 tbsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp ground cinnamon
  • 1/8 tsp allspice

Instructions
 

  • Preheat a fan-assisted oven to 200 deg C or 400 deg F.
  • Shred, or finely chop, the fennel.
  • Heat the lard in a frying pan over a medium heat.
  • Fry the fennel till soft.
  • In a large bowl, mix all the ingredients including the cooked fennel.
  • Squish the mixture through your fingers until the texture is smooth. This is important because without the squishing your meatballs will not stick together.
  • Shape the mixture into about 10 – 12 small balls.
  • Line a baking tray with baking paper.
  • Place all the meatballs onto the baking paper. Make sure each meatball has space on all sides.
  • Oven bake for 25 mins turning the meatballs halfway through.
  • Serve.

    Tried the lamb meatballs with pomme Anna, chickpeas and lamb gravy for dinner tonight. I didn’t have any dried parsley or allspice so I substituted dried rosemary and nutmeg. I don’t know if that was an improvement or not but we enjoyed our meal.
