Seared Mahi Mahi

Dust mahi-mahi fillets with a few mild seasonings and sear in a pan.

We had a family uproar starting three days ago.

A short while ago my five year old daughter, Isla, declared she wanted her hair to be cut. Her fringe kept flopping down in front of her eyes and irritating her. She had also attained some mad hair-dresser skills from an app game for kids… err… no, not really…

So three days ago, one fine sunny morning in Malta, my husband drops Isla off at summer school for the day – with, I must add, a full head of hair.

She came home with barely-there tufts of fuzz covering front.

Carl, aka my husband, aka Isla’s Daddy, is normally a laid back, relaxed kind of guy who takes everything in his stride. Everything, it would seem, except his daughter’s hair. Devastated – he is utterly devastated! This normally quite mild and happy guy has turned into Mr Grump.

Her Grandma and I tried to even it all up a bit and make it look better but gave up. It’s pretty much a lost cause. Until it grows a bit there is no chance of giving it into any sort of shape. I am also a little bummed, I missed the first curl! I saved a curl from my son’s first hair cut and planned to get one from my daughter’s but she has never had her hair cut, until now that is. Now, the treasured first curl is lost on a school room floor.

My daughter, who originally quite liked what she had done has picked up on the not so subtle negativity about her new hairstyle and ended up in tears and as I am holding her little sobbing body the parental guilt sets in. I feel bad. She was so happy and proud she had cut her hair herself and now we have taken it away from her.

I’ve made quite a few parental fails – hasn’t every parent? I officially add this one to the list. She said she wanted the front of her hair to be cut. I knew the front of her hair kept getting into her eyes and bothering her. I hadn’t taken her wishes as seriously as I should have. I will do better next time.

My husband still hasn’t got over the shock of his little princess with mis-matched fringe fuzz and bald patches. That, is definitely going to take just a bit more time…

Now, after the little family drama comes the recipe. This is another simple one. You can never have too many simple recipes, like never, ever! If, like me, you come home from work tired more often than not; being able to get something from nothing and to the table with minimal fuss and bother is priceless. This recipe takes 45 mins but is not much more than leave, rub, place, flip and serve. No energy or thought required, just a frying pan and timer… and the fish itself, of course.

Ingredients
  

  • 2x 200 grams mahi mahi
  • 1 tbsp lard
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder

Instructions
 

  • Remove the mahi mahi from the fridge half an hour before cooking and allow it to reach room temperature.
  • Mix the parsley, salt, black pepper and garlic powder and rub on all sides of the mahi-mahi.
  • Heat the lard in a frying pan on high heat until it starts to shimmer.
  • Add the mahi-mahi to the pan skin side down.
  • Fry for 4 mins skin side down, flip over and fry for 3 mins on the other side.
  • Serve.
