It was off to the beach for my son’s birthday; my littlest one is a big boy of 3 years old now! My son has been a complete water fanatic since birth so the choice of a beach birthday was an obvious one. For the most part Malta has a rocky coastline and most of the beaches are rock. As an adult this is actually a good thing as you can go for a sunbathe and swim without bringing back half the beach in sand with you as a kid the sand is half the fun.

Both my kids are early risers, normally this is not a good thing (I yearn for a long lie in!) but for going to the beach it works out fine as we get there before the sun is too high and my son’s very English skin gets too much of a toasting.

In the Northern part of Malta there is the village of Mellieha, it’s one of the pricier but not priciest locations in Malta. It has two sandy beaches located very close to each other; Ghadira Bay and Mellieha Beach Bay. We chose Ghadira Bay for no particular reason whatsoever and went early in the morning.

First let me say the negatives, because nowhere is perfect. There was an overuse of sunbeds in the area, serious overuse. Those, like ourselves who didn’t want sunbeds were forced into a two metre gap just before the waterline while to get there involved a number of “no, thankyou’s” to the vendors selling the sunbeds. In fact over the time we were there the non-sunbed spots filled up before the sunbeds did suggesting that the number of sunbeds should be seriously reduced. The second was the lack of clean up. People make a mess, it’s unfortunate but true, we are a messy species. We were there early in the morning before many people were there and the amount of rubbish in the sand was quite obviously from previous days and nobody had bothered to clean it up. From the waterline it was clear but the dry beach was part sand, part rubbish. One person set to clearing up the beach rather that laying out unwanted sunbeds would be a far better use of a wage.

Now, the positives. It’s a beach and so the kids loved it. Isla built sandcastles and screamed as she ran from the waves. Taran dove under the water or paddled towards the distant horizon with my husband hovering at the ready for a rescue. Ghadira Bay is in a beautiful location. It’s a long stretch of sandy beach bracketed on either side by distant rocky hills of bleached stone, dark greenery and Maltese style apartment blocks. The sand was lovely and soft and there was plenty of it for a five year ‘sandcastle builder’ to play in. The sun was warm but the beach was cooled to comfortable by the sea, which was great for us parents. The water was initially a little cool but “it’s all right once you’re in”. The sea was clear and it stayed shallow enough for the kids to stand in for a quite a way out. This was great for an intrepid, water loving, just turned three year old to play in. Further out there are plenty of big kid sports; water volleyball, floats, boats, jetskis to name but a few. In short it has something for everyone.

Now to this recipe. This is another of my ‘not hot’ curry recipes. I melt with any kind of ‘hot’ – literally. I start sweating when I eat vinegar so you can imagine what hot spices do to me! For years and years I thought I hated curry’s. I can’t tell you the number of times we went out for an ‘Indian’ and I would be promised that ‘this dish’ is not hot or ‘that dish’ is not hot. The promised ‘not hot’ dish would arrive and one mouthful later I would be red, sweaty and start gargling water. A little later my unfinished dish would still be on the table and I would leave the restaurant with less money but still as hungry. When I discovered the paleo diet, one article I read recommended the discovery of Eastern cooking. I took this to heart and started experimenting – a lot! I discovered the ‘not hot’ curry and my love affair with curry spices began. If, like my husband, you think the hotter the better just add in some chilli powder, as much as you like!

Ingredients
  

  • 2 medium chicken breasts (approx. 250g)
  • 2 tbsp lard

For the Marinade

  • 60 ml coconut cream (1/4 cup)
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp black pepper
  • 1/8 tsp ground ginger

For the Caulflower Crumb

  • 110 g finely grated cauliflower florets (best use a food processor or blender) (1/2 cup)
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/2 tsp salt

Instructions
 

Marinating

  • Chop up the chicken into small 3-5cm(1.5inch – 2inch) long pieces.
  • Mix all the marinade ingredients in a bowl.
  • Add in the chicken and mix again.
  • Cover and leave for 1 hour.

Cooking

  • Mix the cauliflower and cooking spices together on a plate.
  • Remove the chicken pieces from the marinade and discard the marinade.
  • Coat all sides of the chicken pieces in the cauliflower crumb.
  • Heat the lard in a medium frying pan on a medium high heat.
  • Place the chicken pieces flat into the frying pan.
  • Cook 3 mins on one side, turn over and then cook 3 mins on the other side.
  • If the juices run clear or a meat thermometer reads 75 deg C (165 deg F) remove the chicken from the heat, otherwise cook for another minute and check again.
