It’s my son, Taran’s, birthday tomorrow, he is going to be 3 years old! He went off today to nursery to have his birthday party there, it’s one day early since his birthday is on Saturday this year and the nursery isn’t open. We ordered him the bouncy castle. This has a double benefit. The kids get to enjoy themselves obviously and also all the jumping around makes them really, really tired for bed time – parents are happy too! Everyone wins with the bouncy castle!

We also had a choice of balloons or no balloons; we chose balloons, all kids love balloons and he gets to wear the all important birthday hat! This hat gets brought out for every kid with a birthday, my daughter wore it when she had her birthdays there too. It tells all the other kids it’s your ‘happy birthday’ and how special you are for that day. It’s very important is the birthday hat!

We ordered a cake as well. We requested a picture of either an insect or a car or train pictured on it. After all efforts to retain a gender neutral stance on toys and guidance from both my husband and I, my son follows the stereotypical boy interests of insects and vehicles while my daughter loves pretty dresses, pink, rainbows and anything cute. Not sure how I feel about it in all honesty but I am happy that at least their interests are completely their own.

Unrelated to my son’s birthday party the nursery where he attends gets out a small paddling pool every Friday over the Summer. My son loves the water, he is such a water baby it’s actually quite scary how unafraid he is if I am honest and the faster he learns to swim the happier I will be. The nursery said they will put the paddling pool out so the kids can run from bouncy castle to paddling pool and back again. My son is about to have a really great day!

Tomorrow all things going well we are going to take the kids to the beach. We have to go early morning because my son is the typical English golden blonde – with the accompanying pale skin colour – and the Mediterranean sun can be a bit harsh on the blondes. We go early and come back early so we miss the burn. I will tell all next time!

Now back to this fancy concoction of deliciousness I would like to lay claim to but can’t so I even named it after him for full disclosure. This is my husband’s invention, although he to be honest tends to use Greek yoghurt over coconut cream because it’s faster and easier. He suffers from a gluten intolerance and not a lactose intolerance one so he is fine with yoghurt and has it as his 20%. I added the honey in though which, from my point of view, allows me to lay claim to this recipe and use it as I wish – Tadaa! I wish to use it here!

I have recently discovered not all coconut cream hardens in the fridge. I have one type which does and one type which doesn’t. If this is the case for you it’s possible to buy a can of coconut milk, leave it in the fridge over night. The next day, open the can, remove the top solid portion to use for this and use the bottom liquid in another recipe.

Ingredients
  

  • 5 tbsp chilled coconut cream (1/4 cup)
  • 2 tbsp mixed berries (we use the frozen kind)
  • 2 tsp honey

Instructions
 

  • Whisk the chilled coconut cream smooth.
  • Pour the mixed berries on top.
  • Drizzle on the honey.
  • Serve chilled.

Notes

Net Carbs: 16.6g
If you are not strict with the paleo diet this recipe tastes better when you sub the coconut cream with some Greek yoghurt.
