Ingredients
  

To Cook the Shrimp

  • 400 g shrimp, peeled (14oz)
  • 1/2 tbsp lard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

For the Salad

  • 135 g iceberg lettuce (1/4 medium size)
  • 1 medium avocado
  • 200 g cucumber (1/2 medium size)
  • 1 medium tomato

The Dressing

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp honey
  • 1 pinch mustard

Instructions
 

Cook the Shrimp

  • Season the shrimp with salt and pepper.
  • Melt the lard in a medium frying pan on medium heat.
  • Fry the shrimp for about 5 mins (until cooked, they should turn pink coloured) turning half way through.

Make the Salad

  • Shred the lettuce.
  • Dice the cucumber, avocado and tomato.
  • Mix them all together.

To Make the Dressing

  • Whisk the olive oil, apple cider vinegar, honey and mustard in a small bowl.

To Serve

  • Pour the dressing over the salad ingredients and mix.
  • Pour the shrimp on top.
  • Serve.
