Roasted Broccoli and Butternut
Butternut squash, broccoli, tomato and spring onions roasted with curry powder for a warm vitamin packed side dish.
Ingredients
- 450 g butternut squash (about half and average butternut squash, peeled and deseeded)
- 60 g tomato (1 medium tomato)
- 100 g broccoli florets (about half a medium head of broccoli)
- 40 g spring onions (3 medium)
- 1 tsp curry powder (I use mild but feel free to use something stronger)
- 1/2 tsp salt
- 2 tbsp olive oil
Instructions
- Preheat a fan-assisted oven to 200 deg C (400 deg F).
- Dice the butternut squash. Chop the broccoli into medium size florets. Dice the tomato. Slice the spring onions.
- Mix all ingredients together and place in a large casserole dish.
- Bake in the oven for 40 mins. Stir part way through.
- Serve.
