Ingredients
  

  • 450 g butternut squash (about half and average butternut squash, peeled and deseeded)
  • 60 g tomato (1 medium tomato)
  • 100 g broccoli florets (about half a medium head of broccoli)
  • 40 g spring onions (3 medium)
  • 1 tsp curry powder (I use mild but feel free to use something stronger)
  • 1/2 tsp salt
  • 2 tbsp olive oil

Instructions
 

  • Preheat a fan-assisted oven to 200 deg C (400 deg F).
  • Dice the butternut squash. Chop the broccoli into medium size florets. Dice the tomato. Slice the spring onions.
  • Mix all ingredients together and place in a large casserole dish.
  • Bake in the oven for 40 mins. Stir part way through.
  • Serve.
