Paleo Curried Eggs

This recipe needs

  • 6x eggs, boiled
  • 1/2 fennel, finely chopped
  • 4x tomatoes, chopped
  • 125 ml or 1/2 cup coconut cream
  • 1 inch or 2.5cm fresh ginger, grated
  • 4 Tbsp oil (coconut oil is best)
  • 1 tsp honey
  • 1 tsp lime juice
  • 1 tsp dried turmeric
  • 1 tsp dried mustard powder
  • 1 tsp allspice
  • 1/2 tsp dried coriander
  • 1/2 tsp dried basil
  • 1/4 tsp salt

How to make it

  • 6 eggs

Place the eggs in the saucepan and cover with water.

Put the saucepan on a high heat and bring the water to the boil. As soon as its boiling time 6 mins.

Remove the eggs from the heat and immediately transfer into cold water.


  • 4 Tbsp oil
  • 1/2 fennel, finely chopped

Heat the oil in a frying pan on a medium heat and fry the fennel until soft.


  • 4 tomatoes, chopped

Add the tomatoes into the frying pan and fry for another 10 mins.


  • 1 inch fresh ginger, grated
  • 1 tsp dried mustard powder
  • 1 tsp dried turmeric
  • 1 tsp allspice
  • 1 1/2 tsp dried coriander
  • 1/2 tsp dried basil
  • 1/4 tsp salt

Add the above ingredients into the frying pan.

Fry for 2 mins.


  • 1 tsp honey
  • 1 tsp lime juice
  • 125ml coconut cream

Add the above ingredients to the frying pan and simmer for 10 mins.


Meanwhile remove the shells from the eggs.


Add the eggs to the frying pan and stir into the mix. Simmer for another 5 mins until the eggs are warm.
