Ingredients

  • 2x pork chops
  • 3 Tbsp solid fat (lard or duck fat are good will do, if you aren’t strict butter or ghee add some extra flavour)
  • 2x garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sweet paprika
  • 1/4 tsp curry powder

How to make it

If you have the time remove the pork chops from the fridge about 30 mins before cooking.


  • 2x pork chops
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sweet paprika
  • 1/4 tsp curry powder

Mix all the spices and rub on both sides of the pork chops.


  • 3 Tbsp solid fat
  • 2 garlic cloves, crushed

Melt the fat in a frying pan on a medium-high heat.

Add the pork chops and the crushed garlic cloves.

Sear one side for 3 mins, flip over and sear the other side for 2 mins.

Remove if the juices run clear. A meat thermometer should read 62 deg C or 145 deg F.

Wrap in foil and leave for 5 mins.

Possibly the best (and easiest) way I have found of cooking a pork chop. The meat is tender and juicy. The herb rub adds flavour without being overpowering.
