Cucumber and Coconut Cream Tsatziki

This recipe needs
- 1/2 cucumber, peeled and very finely chopped
- 125 mls or 1/2 cup of coconut cream
- 1x garlic clove, crushed
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried dill
- 1/4 tsp salt
- 1/4 tsp dried mint
How to make it
- 1/2 cucumber, peeled and very finely chopped
After preparing the cucumber leave it to dry on some kitchen paper or a clean kitchen towel for 30 mins.
- 125 mls or 1/2 cup of coconut cream
- 1x garlic clove, crushed
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried dill
- 1/4 tsp salt
- 1/4 tsp dried mint
Mix everything together including the cucumber and chill.
One of two possible choices with Chicken Souvlaki.

As the name suggest this was my first attempt at replicating the taste of tsatziki without straying from being paleo. Despite a not so attractive appearance (it is reminiscent of curdled milk) it actually tasted quite good. Tsatziki-like? Hmm….
