Chicken Souvlaki

Ingredients
- 2x chicken breasts, cut into small bite sized pieces
- lettuce leaves (we used a romaine lettuce, but butter or iceberg are just fine)
- 2x tomatoes, finely sliced
- 1/2 red onion, finely sliced
- 1 Tbsp lemon juice
- 2 Tbsp oil (I used olive oil)
- 2x garlic cloves, crushed
- 1 tsp sweet paprika
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried mint
- 1/4 tsp cinnamon
How to make it
- 2x chicken breasts, cut into small bite sized pieces
- 1 Tbsp lemon juice
- 2 Tbsp oil(olive oil)
- 2x garlic cloves, crushed
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp sweet paprika
- 1/2 tsp dried mint
- 1/4 tsp cinnamon
Combine all the above ingredients and place them in a bag (or another suitable container) in the fridge. Marinade for between one hour up to one day.
Preheat fan assisted oven to 200 deg C or 400 deg F.
Spread the marinated chicken on baking paper.
Cook about 10 mins until the chicken is just cooked but still moist.
A meat thermometer should read 75 deg C or 165 deg F.
- lettuce leaves
- 4 tomatoes, finely sliced
- 1x red onion, finely sliced
Place the chicken, some of the tomato and some of the onion into each lettuce leaf and wrap the leaf.
Repeat until all the chicken is used up.
Extras to add
First Attempt Paleo Tsatziki or Second Attempt Paleo Tsatziki
Just spoon on to the chicken before wrapping the lettuce up.
