Ingredients

  • 1/2 iceberg lettuce, chopped
  • 1x avocado, chopped
  • 1x mango, chopped
  • 1x red bell pepper, chopped
  • 3 Tbsp red currants
  • 2 Tbsp olive oil
  • 2 tsp white vinegar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tsp mango juice (use a piece of the mango you are cutting up and squash it)

How to make it

  • 2 Tbsp olive oil
  • 2 tsp white vinegar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tsp mango juice

Mix all the above ingredients into a small bowl. Set aside.


  • 1/2 iceberg lettuce, chopped
  • 1x avocado, chopped
  • 1x mango, chopped
  • 1x red bell pepper, chopped
  • 3 Tbsp red currants

Mix the above ingredients together.


Add the pre-made dressing and mix everything together.

My husband, who is not really a “rabbit food” man went back for seconds and thirds. He then negotiated for the last bit before asking how long it would last in the fridge as snacks. Obviously this was a winner among salads!
