Mince Lettuce Tacos

Mince Lettuce Tacos.
Mince Lettuce Tacos – Yum, Yum!

Servings: 2

Carbs per Serving: 20g


Ingredients

  • 500g beef mince
  • 3x medium carrots, diced
  • 1x onion, finely chopped
  • 1 Tbsp oil (coconut oil works well here)
  • 1 Tbsp dried ground cumin
  • 1 Tbsp sweet paprika
  • 1 Tbsp all spice
  • 1x beef stock cube
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • lettuce (romaine or butter lettuce)

How to make it

  • 3x medium carrots, chopped

Zap the carrots for 5 – 10 mins in the microwave to soften them.


  • 1x onion, chopped
  • 1 Tbsp oil

On a medium heat fry the onion till soft.

Add in the softened carrot.


  • 500g beef mince

Add the beef mince and cook till browned.


  • 1 Tbsp dried ground cumin
  • 1 Tbsp sweet paprika
  • 1 Tbsp all spice
  • 1x beef stock cube
  • 1/2 tsp salt
  • 1/4 tsp pepper

Extras to add

  • 1/8 tsp cayenne pepper

Add the above ingredients (plus the extra if you like) to the mince and stir well.


Turn the heat down to medium/low.

Simmer 45 mins uncovered, stirring occasionally.

Serve the beef mince wrapped in lettuce.
